- 2 medium Onions(finely chopped)
- 4 cloves Garlic(minced)
- 1 inch Ginger(grated)
- 400 g Tomatoes(canned diced, or 4 fresh ripe tomatoes, pureed)
- 2 tsp Baharat spice blend
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Chili powder(adjust to taste)
- 1 tbsp Tamarind paste
- 3 tbsp Vegetable oil
- 0.25 cup Cilantro(fresh, chopped, for garnish)
- to taste Salt
- 0.5 cup Water(or as needed)
👨🍳 Instructions
- 1
Heat vegetable oil in a large skillet or pot over medium heat. Add chopped onions and sauté until softened and lightly golden, about 5-7 minutes.
- 2
Add minced garlic and grated ginger to the pan. Cook for another minute until fragrant.
- 3
Stir in the baharat spice blend, turmeric powder, cumin powder, coriander powder, and chili powder. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
- 4
Add the diced tomatoes (or tomato puree) and tamarind paste to the pan. Stir well to combine. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, allowing the flavors to meld.
- 5
Add the shrimp to the sauce. Season with salt to taste. Stir gently to coat the shrimp evenly. Cook for 5-7 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook.
- 6
If the sauce is too thick, add a little water (about 1/4 cup at a time) until it reaches your desired consistency.
- 7
Garnish with fresh chopped cilantro before serving.
