Bariis iyo Hilib Iskukaris is a comforting and flavorful one-pot Somali dish where fragrant rice is cooked with tender meat and a blend of aromatic spices. It's a staple meal, perfect for lunch or dinner, offering a complete and satisfying experience.

- 500 g Lamb or beef(cubed)
- 2 cups Basmati rice(washed and soaked for 30 minutes)
- 1 large Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated or minced)
- 2 medium Tomatoes(chopped)
- 2 tbsp Tomato paste
- 3 tbsp Vegetable oil or ghee
- 3.5 cups Water or broth(adjust as needed)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 0.5 tsp Turmeric powder
- 0.5 tsp Paprika
- 3-4 whole Cardamom pods
- 1 small Cinnamon stick
- to taste Salt

- 2 tbsp Fresh cilantro(chopped, for garnish)

Heat the oil or ghee in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Add the cubed meat and brown it on all sides. Remove the meat and set aside.

In the same pot, add the chopped onion and sauté until softened and lightly golden, about 5-7 minutes.

Add the minced garlic and ginger, and cook for another minute until fragrant.

Stir in the chopped tomatoes and tomato paste. Cook for about 5 minutes, stirring occasionally, until the tomatoes break down.

Add the ground cumin, coriander, turmeric, paprika, cardamom pods, and cinnamon stick. Stir well to combine with the tomato mixture.

Return the browned meat to the pot. Season with salt and black pepper to taste.
