Buckwheat Kasha with Mushrooms and Onions - Ukraine traditional dish

🧂 Ingredients

  • 1 cup Buckwheat groats (kasha)
  • 2 cups Vegetable broth or chicken broth
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion(thinly sliced)
  • 10 oz Mushrooms (baby bella or cremini)(cleaned and sliced)
  • 3 tablespoons Fresh parsley(chopped)
  • 1 teaspoon Salt(or to taste)
  • 0.5 teaspoon Black pepper(freshly ground, or to taste)

👨‍🍳 Instructions

  1. 1

Rinse the buckwheat groats under cold water. In a medium pot, combine the rinsed buckwheat with vegetable or chicken broth. Season with salt if using unsalted broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the buckwheat is tender. Let it stand, covered, for 5-10 minutes off the heat.

  2. 2

While the buckwheat is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced onion and sauté until softened and lightly golden, about 5-7 minutes.

  3. 3

Add the sliced mushrooms to the skillet with the onions. Cook, stirring occasionally, until the mushrooms have released their liquid and are browned and tender, about 8-10 minutes.

  4. 4

Stir the chopped fresh parsley into the mushroom and onion mixture. Season with black pepper.

  5. 5

Add the cooked buckwheat kasha to the skillet with the mushrooms and onions. Gently mix everything together until well combined and heated through. Taste and adjust seasoning with salt and pepper if needed.

  6. 6

Serve hot as a side dish or a light main course.

💡 Pro Tips

  • For extra flavor, you can toast the buckwheat groats in a dry skillet for a few minutes until fragrant before adding the liquid.
  • If you prefer a richer flavor, you can use chicken broth instead of vegetable broth.
  • Feel free to add other vegetables like peas or diced carrots along with the mushrooms.

🔄 Variations

  • Add a tablespoon of butter at the end for a richer taste.
  • For a vegetarian/vegan version, ensure you use vegetable broth and olive oil.
  • Some recipes include bacon or fried onions for added flavor.
