- 1
In a large bowl, toss the goat meat with olive oil, minced garlic, piri piri sauce, salt, and pepper. Marinate for at least 3-4 hours, or preferably overnight in the refrigerator.
💡 Tip: Marinating tenderizes the meat and infuses it with flavor. - 2
Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add the marinated goat meat and brown it on all sides. This may need to be done in batches to avoid overcrowding the pot.
⏱️ 5-7 minutes - 3
Add the chopped onions and bell peppers to the pot. Sauté until softened, about 5-7 minutes.
⏱️ 5-7 minutes - 4
Stir in the diced tomatoes and paprika. Cook for another 2 minutes, stirring constantly.
⏱️ 2 minutes - 5
Pour in the white wine and scrape the bottom of the pot to loosen any browned bits. Let it simmer for 5 minutes.
⏱️ 5 minutes - 6
Add the cubed potatoes and sweet potatoes, water or stock, and chouriço (if using). Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the goat meat is very tender.
⏱️ 1.5 - 2 hours💡 Tip: Check periodically and add more liquid if the stew becomes too dry. - 7
