Chancho en Piedra is a rustic Chilean salsa, traditionally prepared in a stone mortar, giving it a unique texture. It's similar to pebre but with a distinct preparation method. This flavorful salsa is perfect as a condiment for toast, skewers, or as an accompaniment to various dishes.

- 3 large Ripe tomatoes(peeled and seeded)
- 2 medium Green chilies(seeded and finely chopped)
- 2 large Garlic cloves(peeled)
- 1 tsp Salt
- 1 tsp Black pepper
- 2 tbsp Vegetable oil(optional, for a smoother consistency)

Wash the tomatoes and green chilies. Remove seeds from the chilies and chop them finely. Peel and chop the tomatoes into medium-sized pieces.

In a stone mortar (or a sturdy bowl if a mortar is unavailable), add the peeled garlic cloves and salt. Pound them with a pestle until a paste forms.

Add the finely chopped green chilies to the mortar and pound them with the garlic and salt paste.

Gradually add the chopped tomatoes to the mortar, pounding and mixing until you achieve a chunky salsa consistency. You may need to do this in batches depending on the size of your mortar.
