Chancho en Piedra - Chile traditional dish

🧂 Ingredients

  • 3 large Ripe tomatoes(peeled and seeded)
  • 2 medium Green chilies(seeded and finely chopped)
  • 2 large Garlic cloves(peeled)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Vegetable oil(optional, for a smoother consistency)

👨‍🍳 Instructions

  1. 1

Wash the tomatoes and green chilies. Remove seeds from the chilies and chop them finely. Peel and chop the tomatoes into medium-sized pieces.

  2. 2

In a stone mortar (or a sturdy bowl if a mortar is unavailable), add the peeled garlic cloves and salt. Pound them with a pestle until a paste forms.

  3. 3

Add the finely chopped green chilies to the mortar and pound them with the garlic and salt paste.

  4. 4

Gradually add the chopped tomatoes to the mortar, pounding and mixing until you achieve a chunky salsa consistency. You may need to do this in batches depending on the size of your mortar.

  5. 5

If desired, stir in the vegetable oil for a smoother texture. Season with black pepper to taste.

  6. 6

Serve immediately with crusty bread, crackers, or as a condiment for grilled meats and vegetables.

💡 Pro Tips

  • Using very ripe tomatoes will yield a more flavorful salsa.
  • For a spicier salsa, leave some seeds in the chilies or add an extra chili.
  • If you don't have a mortar and pestle, you can finely chop all ingredients and mix them well in a bowl, though the texture will be different.

🔄 Variations

  • Add a pinch of cumin for an earthy flavor.
  • Incorporate fresh cilantro for added freshness.
