Chilindron de Chivo (Cuban Goat Stew)
A rustic and flavorful goat stew simmered in a rich red sauce with tomatoes, peppers, onions, garlic, and wine, often with a hint of sour orange.

🧂 Ingredients
- 6 lbs Goat meat(cut into medium-sized pieces, excess fat removed)
- 1 cup Sour orange juice(or a mix of orange and lime juice)
- to taste Salt
- to taste Black pepper
- 1.5 teaspoons Ground cumin
- 1.5 teaspoons Dried oregano
- 0.5 cup Vegetable oil
- 10 cloves Garlic cloves(minced or crushed)
- 2 large Onions(sliced or diced)
- 2 Red bell peppers(diced)
- 5 Tomatoes(peeled and chopped, or use 1 cup tomato puree)
- 300 ml Dry red wine
- 2 Bay leaves
- as needed Broth (optional)
- for garnish Fresh parsley(finely chopped)

In a deep container, combine the goat meat with sour orange juice, salt, pepper, cumin, and oregano. Mix well and let it marinate for 2-3 hours.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add the sliced onions and diced red bell peppers and cook until softened, about 10 minutes.

Add the chopped tomatoes (or tomato puree) and cook for another 5 minutes, stirring occasionally.
