  • 6 lbs Goat meat(cut into medium-sized pieces, excess fat removed)
  • 1 cup Sour orange juice(or a mix of orange and lime juice)

  • 1.5 teaspoons Dried oregano
  • 0.5 cup Vegetable oil
  • 10 cloves Garlic cloves(minced or crushed)
  • 2 large Onions(sliced or diced)
  • 2 Red bell peppers(diced)
  • 5 Tomatoes(peeled and chopped, or use 1 cup tomato puree)
  • 300 ml Dry red wine
  • 2 Bay leaves
  • as needed Broth (optional)
  • for garnish Fresh parsley(finely chopped)

    In a deep container, combine the goat meat with sour orange juice, salt, pepper, cumin, and oregano. Mix well and let it marinate for 2-3 hours.

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add the sliced onions and diced red bell peppers and cook until softened, about 10 minutes.
