Dominica Lambi Guisado (Stewed Conch)
Lambi Guisado is a flavorful and tender stewed conch dish, a staple in Dominican cuisine. The conch is slow-cooked in a rich tomato-based sauce with aromatic vegetables and spices, resulting in a tender texture and deep flavor. It's often served with rice and local vegetables.

- 1.5 lbs Fresh conch(cleaned and tenderized (tenderized by pounding or slow cooking))
- 2 tbsp Olive oil
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1/2 medium Bell pepper(chopped (any color))
- 1 small Green chili pepper(seeded and minced (optional, for heat))
- 2 medium Tomatoes(blended or finely chopped)
- 2 tbsp Tomato paste
- 1 cup Water or fish stock
- 1 tbsp Worcestershire sauce
- 1 tsp Dried oregano
- 1 tsp Thyme(fresh or dried)

- 2 tbsp Fresh cilantro or parsley(chopped, for garnish)

If the conch is not pre-tenderized, pound it with a mallet or boil it in salted water with a bay leaf and a few peppercorns for about 1 hour until tender. Drain and cut into bite-sized pieces.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic, chopped bell pepper, and green chili (if using). Cook for another 3-5 minutes until the peppers begin to soften.

Stir in the blended tomatoes and tomato paste. Cook for 2-3 minutes, stirring constantly, until the paste darkens slightly.

Add the tenderized conch pieces, water or fish stock, Worcestershire sauce, oregano, and thyme. Season with salt and black pepper to taste.
