  • 1.5 lbs Fresh conch(cleaned and tenderized (tenderized by pounding or slow cooking))
  • 2 tbsp Olive oil
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 1/2 medium Bell pepper(chopped (any color))
  • 1 small Green chili pepper(seeded and minced (optional, for heat))
  • 2 medium Tomatoes(blended or finely chopped)
  • 2 tbsp Tomato paste
  • 1 cup Water or fish stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dried oregano
  • 1 tsp Thyme(fresh or dried)

  • to taste Black pepper
  • 2 tbsp Fresh cilantro or parsley(chopped, for garnish)

    If the conch is not pre-tenderized, pound it with a mallet or boil it in salted water with a bay leaf and a few peppercorns for about 1 hour until tender. Drain and cut into bite-sized pieces.

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
