- 1/2 medium head Cabbage
- 2 medium Carrots
- 2 medium Potatoes
- 1 medium Yellow Onion
- 3 cloves Garlic
- 1 inch piece Fresh Ginger
- 2 tablespoons Vegetable Oil or Ghee
- 1 teaspoon Turmeric Powder
- 1/4 cup Water or Vegetable Broth

Heat the vegetable oil or ghee in a large skillet or pot over medium heat (about 175°C / 350°F). Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. Stir in the minced garlic and ginger and cook for another minute until fragrant, being careful not to burn them.

Add the cubed potatoes and sliced carrots to the skillet. Stir to coat them with the onion mixture. Pour in the water or vegetable broth, and season with salt and pepper. The vegetables should be moist but not soupy.
