Ye'misir Alicha (Mild Red Lentil Stew)
A comforting and mild yellow lentil stew, a staple in Ethiopian cuisine, especially during fasting periods. This 'alicha' version is distinguished by its lack of spicy berbere, relying on turmeric for its vibrant color and gentle flavor.

- 300g Red lentils
- 1 medium Yellow onion
- 3-4 cloves Garlic
- 1 teaspoon Ground turmeric
- 4 tablespoons Neutral cooking oil(such as vegetable, canola, or sunflower oil)
- 900 ml (approx. 3.75 cups) Water or vegetable broth(adjust for desired consistency)

Heat the oil in a medium-sized pot or Dutch oven over medium heat (around 180°C / 350°F). Add the finely diced onion and sauté, stirring occasionally, until softened and translucent, about 5-7 minutes. Continue cooking until the onion turns a light golden brown color, stirring more frequently to prevent burning, about another 5-7 minutes.

Add the minced garlic and ground turmeric to the pot. Stir constantly and cook for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

Add the thoroughly rinsed red lentils to the pot. Stir to coat them with the onion, garlic, and turmeric mixture. Pour in the water or vegetable broth. Stir everything together.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer gently. Cook for 20-25 minutes, stirring occasionally to prevent sticking. The lentils should become very soft, break down, and thicken the stew to a creamy consistency. If the stew becomes too thick, add a little more water or broth.
