👨‍🍳 Instructions

  1. 1

Season the chicken pieces generously with salt and pepper.

    ⏱️ 2 minutes
  2. 2

Heat cooking oil in a large pot or Dutch oven over medium-high heat (around 190°C / 375°F). Sear the chicken pieces until golden brown on all sides. This step adds flavor and color. Remove chicken from the pot and set aside.

    ⏱️ 10-15 minutes
  3. 3

Lower the heat to medium (around 175°C / 350°F). Add the minced garlic and chopped onion to the same pot. Sauté until the onion is softened and translucent, about 3-5 minutes, scraping up any browned bits from the bottom of the pot.

    ⏱️ 5 minutes
  4. 4

Pour in the tomato sauce and water or chicken broth. Stir well to combine. Bring the mixture to a simmer.

    ⏱️ 2 minutes
  5. 5

Return the browned chicken pieces to the pot. Add the cubed potatoes and carrots (if using). Ensure the chicken and vegetables are mostly submerged in the liquid. Cover the pot, reduce heat to low (around 150°C / 300°F), and simmer gently for 25-30 minutes, or until the potatoes and carrots are tender when pierced with a fork.

    ⏱️ 30 minutes
  6. 6

Add the bell pepper pieces and green peas to the pot. Stir gently. Continue to simmer, uncovered, for another 5-7 minutes, or until the bell peppers are tender-crisp and the peas are heated through. If using soy sauce, stir it in now.

    ⏱️ 7 minutes
  7. 7

Taste and adjust seasoning with salt and pepper as needed. The sauce should be slightly thickened. Serve hot.
