Turon (Filipino Banana Spring Rolls)
Turon is a popular Filipino street food snack made from thinly sliced bananas and jackfruit, wrapped in a spring roll wrapper, and deep-fried until golden and crispy. It's often coated in caramelized sugar for an extra sweet and delicious treat.

- 6 Saba bananas
- 12 Spring roll wrappers (lumpia wrappers)(Thaw according to package directions if frozen.)
- 100 g Jackfruit
- 100 g Brown sugar(For coating the bananas and for caramelizing.)
- small amount Water(For sealing the wrappers.)
- sufficient for deep frying Vegetable oil(Such as canola, peanut, or vegetable oil.)

Prepare the bananas: Peel the Saba bananas and cut each banana in half lengthwise. Then, cut each half into three equal pieces, creating 6 pieces per banana. In a shallow dish, spread out the brown sugar. Roll each banana piece in the brown sugar until lightly coated. Set aside.

Assemble the turon: Lay a spring roll wrapper flat on a clean surface with one corner pointing towards you (like a diamond). Place a sugar-coated banana piece and a few strips of jackfruit near the bottom corner. Fold the bottom corner up over the filling, then fold in the left and right sides towards the center. Tightly roll the wrapper upwards towards the top corner, ensuring the filling is enclosed.

Seal the wrapper: Lightly moisten the top corner of the spring roll wrapper with a little water. Press the rolled turon firmly onto the moistened corner to seal it completely. This prevents the turon from unraveling during frying. Repeat with the remaining wrappers and filling.

Fry the turon: Heat about 2-3 inches of vegetable oil in a deep pan or wok over medium-high heat until it reaches 175°C (350°F). Carefully place the assembled turon into the hot oil, ensuring not to overcrowd the pan. Fry for 5-7 minutes, turning occasionally, until golden brown and crispy. Remove the turon with a slotted spoon and drain on paper towels.

Optional caramel drizzle: While the turon are frying, you can make a quick caramel. In a small saucepan, heat the remaining brown sugar (about 2-3 tablespoons) with 1-2 tablespoons of water over medium heat. Stir until the sugar dissolves and the mixture begins to bubble and turn a deep amber color. Be careful not to burn it. Drizzle the hot caramel over the fried turon just before serving.
