🧂 Ingredients

  • 300 g Cod fillets(skinned and boned, cut into chunks)
  • 300 g Haddock fillets(skinned and boned, cut into chunks)
  • 150 g Smoked mackerel fillets(skinned and boned, cut into chunks)
  • 50 g Butter
  • 50 g All-purpose flour
  • 600 ml Milk
  • 30 g Fresh parsley(chopped)
  • 15 g Fresh dill(chopped)
  • 1 tbsp Lemon juice
  • to taste Salt
  • to taste White pepper
  • 1 kg Potatoes(peeled and quartered)
  • 2 medium Leeks(trimmed, washed, and thinly sliced)
  • 30 g Butter (for topping)
  • 50 ml Milk (for topping)

    Boil the potatoes in salted water until tender. Drain well. While potatoes are boiling, steam or poach the cod and haddock in a little water or milk until just cooked. Drain and flake into a bowl. Add the smoked mackerel.

    In a separate saucepan, melt 50g butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux.

    Gradually whisk in the milk until the sauce is smooth and thickened. Bring to a gentle simmer and cook for 5 minutes.

    Stir the chopped parsley, dill, and lemon juice into the sauce. Season with salt and white pepper to taste.

    Gently fold the flaked fish into the sauce. Pour the fish mixture into a large ovenproof dish.

    While the fish is in the ovenproof dish, sauté the sliced leeks in 30g butter until softened, about 5-7 minutes. Add them to the mashed potatoes along with 50ml milk and 30g butter. Mash until smooth and season with salt and pepper.

    Spoon the potato and leek mash over the fish mixture, spreading it evenly to cover the surface.

    Bake in a preheated oven at 190°C (375°F) for 30-35 minutes, or until the topping is golden brown and the filling is bubbling.
