Idrijski Želnik s Mesom (Idrija Meat Rolls)

- 250 ml Warm water
- 2 tbsp Vegetable oil
- 1 tsp Salt
- 400 g Ground pork or beef
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 2 tbsp Parsley(chopped fresh)
- 1 tsp Marjoram(dried)
- 0.5 tsp Black pepper(freshly ground)
- 0.5 tsp Salt(for filling)
- 1 large Egg(beaten, for egg wash)

For the dough: In a large bowl, combine flour and salt. Gradually add warm water and vegetable oil, mixing until a soft, pliable dough forms. Knead on a floured surface for 8-10 minutes until smooth. Cover and let rest for 30 minutes.

For the filling: In a skillet, sauté the chopped onion in a little oil until softened. Add minced garlic and cook for another minute. In a bowl, combine the ground meat, sautéed onion and garlic mixture, chopped parsley, marjoram, salt, and pepper. Mix well.

Divide the dough into 4 equal portions. On a lightly floured surface, roll out each portion very thinly into a rectangle, about 2-3 mm thick.

Spread a generous layer of the meat filling evenly over each rectangle of dough, leaving a small border around the edges.

Carefully roll up each rectangle tightly, like a Swiss roll. Pinch the ends to seal.
