Iskudhex
Iskudhex is a flavorful and aromatic rice dish, often prepared for special occasions, featuring tender meat (typically lamb or beef), fragrant spices, and sometimes vegetables. It's a one-pot meal that embodies Somali hospitality and culinary tradition.

- 1 kg Lamb or Beef(cut into 1.5-inch cubes)
- 3 cups Basmati Rice(rinsed thoroughly)
- 2 large Onions(finely chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(crushed or pureed)
- 4 tbsp Vegetable Oil or Ghee
- 1 piece Cinnamon Stick
- 4 pods Cardamom Pods
- 3 whole Cloves
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- to taste Salt
- to taste Black Pepper
- 5 cups Water or Broth(adjust as needed for rice)
- 1/4 cup Raisins(optional, for garnish)
- 1/4 cup Fresh Cilantro(chopped, for garnish)

Heat oil or ghee in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the meat on all sides. Remove meat and set aside.

Add chopped onions to the pot and sauté until golden brown, about 8-10 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the crushed tomatoes, turmeric, coriander, cumin, salt, and pepper. Cook for 5 minutes, stirring occasionally, until the sauce thickens slightly.

Return the browned meat to the pot. Add the cinnamon stick, cardamom pods, and cloves. Pour in enough water or broth to cover the meat by about an inch. Bring to a boil, then reduce heat, cover, and simmer for 1 hour, or until the meat is tender.
