  • 250 ml White wine
  • mirepoix Carrots, celery, onion
  • 200 g Tomatoes
  • for serving Gremolata (lemon, garlic, parsley)
  • for serving Risotto alla Milanese

    Dredge and brown shanks.

    Sauté mirepoix. Add wine, reduce.
