Jamaican Sweet Potato and Banana Fritters
Delightful sweet fritters made from grated sweet potato and ripe bananas, seasoned with spices, and fried to a golden crisp. A popular snack or dessert.

- 2 medium Sweet potato(peeled and grated)
- 2 large Ripe bananas(mashed)
- 1.5 cups All-purpose flour
- 0.5 cup Granulated sugar(adjust to taste)
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 0.5 tsp Ground nutmeg
- 0.25 tsp Salt
- 0.25 cup Milk(or as needed for consistency)
- for frying Vegetable oil

In a large bowl, combine the grated sweet potato and mashed ripe bananas.

In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

Add the dry ingredients to the wet ingredients. Stir until just combined. The batter should be thick but spoonable. Add milk a tablespoon at a time if needed to reach the desired consistency.

Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat until it reaches about 350°F (175°C).
