Kaas en Prei Taart
A savory tart featuring a flaky pastry crust filled with tender leeks and a blend of melted cheeses, often including Gouda. This tart is a delightful appetizer or a light main course.

🧂 Ingredients
- 375 g Puff pastry(ready-rolled)
- 3 medium Leeks(white and light green parts, thinly sliced and washed)
- 2 tbsp Butter
- 150 g Gouda cheese(grated)
- 100 g Cheddar cheese(grated)
- 2 large Eggs
- 150 ml Heavy cream
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 0.125 tsp Nutmeg(freshly grated (optional))

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Unroll the puff pastry and place it on the prepared baking sheet. Score a border about 2cm from the edge all around, being careful not to cut all the way through. Prick the inside area all over with a fork.

In a skillet, melt the butter over medium heat. Add the sliced leeks and cook gently until softened, about 5-7 minutes. Do not let them brown.

In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg (if using).

Scatter half of the grated cheeses over the puff pastry inside the scored border. Top with the softened leeks, then scatter the remaining cheeses over the leeks.

Pour the egg and cream mixture evenly over the cheese and leeks.

Bake for 25-30 minutes, or until the pastry is golden brown and puffed, and the filling is set.
