  • 1 kg Beef chuck(cut into 1.5-inch cubes)
  • 3 tbsp Vegetable oil
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 tbsp Ginger(grated)
  • 400 g Tomatoes(diced)
  • 500 ml Beef broth
  • 2 tbsp Tomato paste
  • 1 tbsp Curry powder
  • 1 tsp Turmeric powder
  • to taste Salt

  • 2 cups Maize flour (ugali flour)
  • 4 cups Water(for ugali)

    Pat the beef dry with paper towels and season generously with salt and pepper.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove beef and set aside.

    Add chopped onions to the pot and cook until softened, about 5-7 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

    Stir in the diced tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally, until tomatoes start to break down.

    Return the browned beef to the pot. Pour in the beef broth, curry powder, and turmeric. Stir to combine.

    While the stew is simmering, prepare the ugali. In a separate pot, bring 4 cups of water to a boil. Gradually whisk in the maize flour, starting with about 1 cup, until a thick porridge forms. Continue adding flour and stirring vigorously with a wooden spoon until the ugali is firm and well-cooked, about 10-15 minutes.
