🧂 Ingredients
- 1 kg Beef chuck(cut into 1.5-inch cubes)
- 3 tbsp Vegetable oil
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 1 tbsp Ginger(grated)
- 400 g Tomatoes(diced)
- 500 ml Beef broth
- 2 tbsp Tomato paste
- 1 tbsp Curry powder
- 1 tsp Turmeric powder
- to taste Salt
- to taste Black pepper
- 2 cups Maize flour (ugali flour)
- 4 cups Water(for ugali)
👨🍳 Instructions
- 1
Pat the beef dry with paper towels and season generously with salt and pepper.
- 2
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove beef and set aside.
- 3
Add chopped onions to the pot and cook until softened, about 5-7 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.
- 4
Stir in the diced tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally, until tomatoes start to break down.
- 5
Return the browned beef to the pot. Pour in the beef broth, curry powder, and turmeric. Stir to combine.
- 6
Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth or water if needed.
- 7
While the stew is simmering, prepare the ugali. In a separate pot, bring 4 cups of water to a boil. Gradually whisk in the maize flour, starting with about 1 cup, until a thick porridge forms. Continue adding flour and stirring vigorously with a wooden spoon until the ugali is firm and well-cooked, about 10-15 minutes.
- 8
Taste the beef stew and adjust seasoning with salt and pepper if necessary. Serve the hot beef stew with portions of ugali.
💡 Pro Tips
- ✓For a richer flavor, you can add a bay leaf to the stew while it simmers.
- ✓If you prefer a thicker stew, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the simmering stew during the last 15 minutes of cooking.
- ✓Ensure the ugali is cooked through to avoid a gritty texture.
🔄 Variations
- Add chopped carrots or potatoes to the stew for extra vegetables.
- For a spicier kick, add a pinch of chili flakes or a chopped fresh chili pepper.
