Lao Noodle Soup (Khao Piak Sen)

- 1 lb Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 8 cups Chicken broth
- 1/2 cup Rice flour
- 1/4 cup Tapioca starch
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 medium Shallots(thinly sliced)
- 3 tbsp Fish sauce
- 1 tsp Salt(or to taste)
- 1/2 tsp White pepper
- 2 tbsp Vegetable oil
- 3 stalks Green onions(chopped, for garnish)
- 1/4 cup Cilantro(chopped, for garnish)

In a large pot, heat vegetable oil over medium heat. Sauté minced garlic, grated ginger, and sliced shallots until fragrant and lightly browned.
