Lao Red Curry Chicken (Gadang Pit)

Gadang Pit is a flavorful Laotian red curry that offers a delightful balance of spices and creamy coconut milk. Unlike some Thai versions, this Lao curry is not overly sweet, with sugar used sparingly for balance. 🧂 Ingredients

  • 6 ea Boneless, skinless chicken marylands(chopped into chunky pieces)
  • 1 tbsp Latasha's Kitchen Turmeric Spice Magic(or other curry powder blend)
  • 3 tbsp Neutral oil
  • 1 ea Large brown onion(chopped)
  • 6 ea Kaffir lime leaves(finely shredded)
  • 3 cm Galangal(sliced)
  • 2 cloves Garlic(minced)
  • 2 ea Lemongrass(white section bashed)
  • 400 ml Coconut cream(Ayam brand or similar)
  • 4 tbsp Latasha's Kitchen Madras Curry Paste(or good quality red curry paste)
  • 4 ea Potatoes(quartered)
  • 2 tsp Sea salt
  • 1.25 litres Water
  • 1/2 cup Bamboo shoots(sliced)
  • 1/2 cup Garden peas
  • 1/2 head Broccoli(cut into florets)
  • 1 medium Carrot(cut into small chunks)
  • 2 tbsp Fish sauce
  • 2 ea Fresh red chilies(sliced)
  • 1 bunch Thai basil(leaves chopped)

👨‍🍳 Instructions

    Marinate chicken in Turmeric Spice Magic for at least an hour.

    In a large pot, heat oil over medium heat. Add Ingredients A (onion, kaffir lime leaves, galangal, garlic, lemongrass) and cook until fragrant and onions are translucent, about 12 minutes.

    Add coconut cream and Madras Curry Paste. Cook for 10 minutes on low heat until well combined.

    Add the marinated chicken and brown in the paste for 5 minutes.

    Add potatoes, salt, and water. Bring to a boil, then simmer with a lid on for 40 minutes.

    Add bamboo shoots, peas, broccoli, carrots, fish sauce, and the remaining coconut cream. Add sliced red chilies. Stir to combine and cook for another 5-7 minutes, or until vegetables are tender.

    Stir in the chopped Thai basil leaves just before serving. Serve hot with jasmine rice.

  • If you don't have Latasha's Kitchen products, use a good quality curry powder and red curry paste.
  • Adjust the amount of chilies to your spice preference.
  • This curry is also delicious with other proteins like beef or tofu.
