Malian Goat Stew with Millet

- 750 g Goat meat(cut into 1.5-inch cubes)
- 2 large Onions(chopped)
- 400 g Tomatoes(diced)
- 5 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 4 cups Water or goat broth
- 1 optional Bouillon cube
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1/2 tsp Turmeric powder
- 1/4 tsp Cayenne pepper(or to taste)

- 1.5 cups Millet(for serving)
- 3 cups Water(for millet)

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the goat meat on all sides in batches. Remove the meat and set aside.

Add the chopped onions to the pot and sauté until softened and lightly browned, about 8-10 minutes.

Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.

Add the diced tomatoes, ground cumin, ground coriander, turmeric, cayenne pepper, salt, and black pepper. Cook for 5 minutes, stirring frequently, until the tomatoes have broken down.

Return the browned goat meat to the pot. Pour in the water or goat broth and add the bouillon cube (if using). Bring to a boil.

Reduce the heat to low, cover the pot tightly, and simmer for at least 1 hour and 15 minutes, or until the goat meat is very tender. Stir occasionally and add more liquid if needed.

While the stew is simmering, prepare the millet. In a separate saucepan, combine the millet and 3 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the water is absorbed and the millet is tender. Fluff with a fork.

Taste the goat stew and adjust seasoning as needed. If the sauce is too thin, you can simmer it uncovered for a few minutes to thicken.
