Mancala Fish Stew

- 800 g Firm white fish fillets(such as tilapia, kingfish, or cod, cut into chunks)
- 2 medium Onions(chopped)
- 4 Garlic cloves(minced)
- 1 inch piece Ginger(grated)
- 400 g Tomatoes(chopped, or 1 can diced tomatoes)
- 400 ml Coconut milk(full fat)
- 200 ml Vegetable broth
- 1 Bell pepper(any color, chopped)
- 1 bunch Coriander(chopped, for garnish)
- 1 Chili pepper(finely chopped, optional)
- 1 tsp Turmeric powder
- 1 tsp Cumin powder

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until softened, about 5-7 minutes.

Stir in the chopped tomatoes (and their juices if using canned) and bell pepper. Cook for 5-7 minutes, allowing the tomatoes to break down slightly.

Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer, then reduce heat and let it cook gently for 15-20 minutes, allowing the flavors to meld.

Season the stew with salt and black pepper to taste. Add the chopped chili pepper if using.
