Mchuzi wa Nyama na Mboga (Tanzanian Meat and Vegetable Stew)
A hearty and flavorful stew featuring tender chunks of beef simmered with a medley of vegetables in a rich, spiced broth. This dish is a comforting and complete meal, often served with ugali or rice.

🧂 Ingredients
- 2 lbs Beef stew meat(cut into 1-inch cubes)
- 2 tbsp Vegetable oil
- 2 medium Onions(chopped)
- 4 cloves Garlic cloves(minced)
- 1 inch piece Ginger(grated)
- 2 medium Tomatoes(chopped)
- 2 medium Potatoes(peeled and cubed)
- 2 medium Carrots(sliced)
- 2 Green bananas(peeled and sliced thickly)
- 1 small Eggplant(cubed)
- 1 cup Cabbage(sliced)
- 1 Green bell pepper(sliced)
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Turmeric
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(to taste)
- 4-6 cups Water or Beef Broth(enough to cover ingredients)

In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.
