Mopane Worms Stew

- 2 cups Dried Mopane worms(rinsed and soaked in hot water with lemon juice for 10 minutes)
- 1 medium Onion(finely chopped)
- 2 large Tomatoes(diced)
- 2 cloves Garlic(minced)
- 1 teaspoon Curry powder
- 1 teaspoon Paprika
- 0.5 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper
- 1 tablespoon Cooking oil
- 0.5 cup Water
- 1 small Chili(optional, for spice)
- Fresh coriander or parsley(for garnish)

Prepare the Mopane Worms: Rinse the dried Mopane worms under cold water. Place them in a bowl and cover with hot water. Add lemon juice and let them soak for about 10 minutes to soften. After soaking, drain the worms and set them aside.

In a separate pan, heat the cooking oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onions are golden brown.

Add the diced tomatoes, curry powder, paprika, salt, and black pepper to the pan. Cook for about 5 minutes, stirring occasionally, until the tomatoes begin to break down and form a sauce.

Add the soaked and drained Mopane worms to the pan. Stir well to coat them with the sauce. If using chili, add it at this stage.
