Newfoundland Fish Stew (Cod au Gratin Variation)

- 1 kg Cod fillets(skinless, boneless, cut into 2-inch pieces)
- 150 g Salt pork(diced)
- 2 medium Yellow onions(chopped)
- 3 medium Carrots(peeled and diced)
- 3 medium Potatoes(peeled and diced)
- 2 Celery stalks(chopped)
- 4 cloves Garlic(minced)
- 60 g All-purpose flour
- 750 ml Milk
- 500 ml Fish or vegetable broth
- 0.25 cup Fresh parsley(chopped)
- 1 tbsp Fresh thyme(chopped)
- 1 Bay leaf
- Salt and black pepper(to taste)

In a large pot or Dutch oven, cook the diced salt pork over medium heat until crisp. Remove the salt pork with a slotted spoon and set aside, leaving the rendered fat in the pot.
