Newfoundland Jiggs Dinner with Dressing

- 6 medium Potatoes(peeled and quartered)
- 4 medium Carrots(peeled and cut into large chunks)
- 2 medium Turnips(peeled and cut into large chunks)
- 2 medium Parsnips(peeled and cut into large chunks)
- 0.5 large head Cabbage(cut into wedges)
- 1 cup Yellow split peas(soaked overnight or for at least 4 hours)
- 4 cups Water or beef broth(for pease pudding)
- 4 cups Stale bread(cubed, for dressing)
- 1 medium Onion(finely chopped, for dressing)
- 0.5 cup Melted butter(for dressing)
- 2 tbsp Chopped parsley(for dressing)

Rinse the salt beef thoroughly under cold water. Place it in a large pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 1 hour.

While the beef simmers, prepare the pease pudding: Drain the soaked split peas and place them in a separate pot. Add 4 cups of water or broth, bring to a boil, then reduce heat and simmer, covered, for about 1.5 to 2 hours, or until very tender and mushy. Season with salt and pepper.
