Palestinian Chicken and Rice with Spiced Yogurt

- 1.5 lb Chicken thighs(bone-in, skin-on, cut into pieces)
- 2 cups Basmati rice(rinsed)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 4 cups Chicken broth
- 3 tbsp Olive oil
- 1.5 tsp Ground cumin
- 1 tsp Ground coriander
- 0.5 tsp Turmeric
- 1 Cinnamon stick
- 1 Bay leaf
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 2 cups Plain yogurt
- 2 tbsp Lemon juice
- 0.25 cup Fresh mint(chopped, for garnish)
- 0.5 cup Toasted almonds(slivered, for garnish)

Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken pieces until golden brown on all sides. Remove chicken and set aside.

Add chopped onion to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in cumin, coriander, turmeric, salt, and pepper. Cook for 30 seconds, stirring constantly, until spices are fragrant.
