  • 1.5 lb Chicken thighs(bone-in, skin-on, cut into pieces)
  • 2 cups Basmati rice(rinsed)
  • 1 large Onion(chopped)
  • 4 cloves Garlic(minced)
  • 4 cups Chicken broth
  • 3 tbsp Olive oil
  • 1.5 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric
  • 1 Cinnamon stick
  • 1 Bay leaf
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground)
  • 2 cups Plain yogurt
  • 2 tbsp Lemon juice
  • 0.25 cup Fresh mint(chopped, for garnish)
  • 0.5 cup Toasted almonds(slivered, for garnish)

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear chicken pieces until golden brown on all sides. Remove chicken and set aside.
