Pampushky z Chereshniamy (Sweet Cherry Buns) - Ukraine traditional dish

🧂 Ingredients

  • 500 g All-purpose flour
  • 250 ml Warm milk
  • 7 g Active dry yeast
  • 80 g Granulated sugar
  • 2 large Eggs
  • 50 g Unsalted butter, softened
  • 1 tsp Salt
  • 400 g Fresh or frozen cherries, pitted(if frozen, thaw and drain well)
  • 2 tbsp Cornstarch
  • 50 g Powdered sugar, for dusting
  • For the syrup (optional):
  • 50 ml Water
  • 50 g Granulated sugar

👨‍🍳 Instructions

  1. 1

In a small bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit for 5-10 minutes until foamy.

💡 Tip: Ensure milk is warm, not hot, to activate the yeast.
  2. 2

In a large bowl, whisk together flour, remaining sugar, and salt. Make a well in the center.

💡 Tip: Sifting the flour can result in lighter buns.
  3. 3

Add the foamy yeast mixture, eggs, and softened butter to the well. Mix until a shaggy dough forms.

    ⏱️ 5 minutes
  4. 4

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

    ⏱️ 10 minutes
💡 Tip: Dough should spring back when lightly poked.
  5. 5

Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

    ⏱️ 1.5 hours
💡 Tip: A slightly warm oven (turned off) is a good place for rising.
  6. 6

While the dough rises, prepare the cherry filling. In a bowl, toss pitted cherries with cornstarch and 2 tablespoons of sugar. If using frozen cherries, ensure they are well-drained.

💡 Tip: Cornstarch will help thicken the cherry juices.
  7. 7

Once the dough has risen, punch it down and divide it into 12 equal portions. Shape each portion into a ball.

    ⏱️ 5 minutes
  8. 8

Flatten each dough ball, place about 1-2 tablespoons of cherry filling in the center, and carefully seal the edges to form a bun. Place seam-side down on a baking sheet lined with parchment paper, leaving some space between them.

💡 Tip: Ensure the buns are well sealed to prevent filling from leaking.
  9. 9

Cover the buns and let them rest for another 20-30 minutes.

    ⏱️ 30 minutes
  10. 10

Preheat oven to 180°C (350°F). Bake the pampushky for 18-20 minutes, or until golden brown.

    ⏱️ 20 minutes
  11. 11

While the buns are baking, prepare the optional syrup by simmering water and sugar until dissolved.

    ⏱️ 5 minutes
  12. 12

Once baked, brush the warm buns with the syrup (if using) and dust with powdered sugar before serving.

💡 Tip: Serve warm for the best texture and flavor.

💡 Pro Tips

  • Using fresh, in-season cherries will yield the best flavor.
  • Don't overfill the buns to ensure they seal properly.
  • If you don't have cherries, other berries like blueberries or raspberries can be used.

🔄 Variations

  • Add a pinch of cinnamon or nutmeg to the cherry filling for extra spice.
  • Instead of dusting with powdered sugar, drizzle with a simple glaze made from powdered sugar and a little milk or lemon juice.
  • For a richer dough, you can add an extra egg yolk.
