  • 1 kg Green papaya(peeled, seeded, and cut into 1/2 inch cubes)
  • 500 g Lean beef(cut into thin strips or small cubes)
  • 500 g Potatoes(peeled and cut into 1/2 inch cubes)
  • 1 medium Onion(chopped)
  • 1 medium Green bell pepper(chopped)
  • 4 cloves Garlic(minced)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Annatto powder (achiote)
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Salt(or to taste)
  • 1 teaspoon Black pepper(freshly ground, or to taste)
  • 1 teaspoon Worcestershire sauce

    In a large pot, cook the beef in a little water over medium heat until tender. Drain and reserve the cooking liquid. Cut the beef into thin strips or small cubes.

    In the same pot (or a separate one), heat the oil over medium-high heat. Add the chopped onion and green bell pepper, sauté until softened, about 5 minutes.

    Add the cubed potatoes and the prepared beef to the pot. Stir to combine.
