Pidpenky is a rich and flavorful Ukrainian mushroom stew, often made with a combination of fresh and dried mushrooms, simmered in a savory broth with onions and garlic. This dish is a staple in Ukrainian cuisine, especially during festive occasions, and is known for its deep, earthy flavors.

🧂 Ingredients
- 150 g Dried porcini mushrooms(about 5.5 oz)
- 300 g Fresh mushrooms(such as white button, cremini, or shiitake)
- 1 large Onion(finely chopped)
- 2 cloves Garlic(minced)
- 1 cup Beef consommé or broth(plus extra if needed)
- 0.25 cup Red wine
- 3 tbsp All-purpose flour
- 2 tbsp Butter(melted)
- 1 tsp Lemon juice
- to taste Salt
- to taste Black pepper
- optional Fresh dill(for garnish)
- optional Sour cream(for serving)
👨🍳 Instructions
- 1
Rinse dried porcini mushrooms under cold water. Soak them in 3 cups of warm water for at least 3 hours, or until softened. Strain the mushrooms, reserving the flavorful soaking liquid. Chop the rehydrated mushrooms.
💡 Tip: Filter the soaking liquid through cheesecloth or a fine-mesh sieve to remove any grit. - 2
Clean fresh mushrooms, trim stems, and chop them. Finely chop the onion and mince the garlic.
⏱️ 10 minutes - 3
In a large pot, combine the chopped dried mushrooms, fresh mushrooms, chopped onion, minced garlic, beef consommé (or broth), and red wine. Bring to a boil, then reduce heat, cover, and simmer for about 1 hour, or until mushrooms are tender. Add more broth or water if the mixture becomes too dry.
⏱️ 1 hour - 4
In a small bowl, whisk together the melted butter and flour until smooth to create a roux. Stir this mixture slowly into the simmering mushrooms. Bring to a boil, stirring constantly, until the stew thickens.
💡 Tip: Ensure the roux is fully incorporated to avoid lumps. - 5
Stir in the lemon juice. Season with salt and black pepper to taste.
💡 Tip: Adjust seasoning as needed. - 6
Serve hot, garnished with fresh dill and a dollop of sour cream, if desired.
💡 Tip: Pidpenky is excellent served with crusty bread or mashed potatoes.
