- 1 tablespoon Adobo seasoning
- 1 teaspoon Garlic powder
- 1 teaspoon Salt

- 1 tablespoon Vegetable oil
- 0.25 cup Sofrito
- 1 can (8 oz) Tomato sauce
- 2 cups Chicken broth
- 0.25 cup Pimento-stuffed olives(pitted)
- 2 medium Potatoes(peeled and cut into 1-inch chunks)
- 1 cup Carrots(chopped (optional))
- 1 packet Sazón seasoning with achiote((optional, for color))

Season the chicken pieces with adobo, garlic powder, salt, pepper, and oregano. Let marinate for at least 15 minutes, or up to 24 hours in the refrigerator.

Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the chicken pieces on all sides, working in batches if necessary to avoid crowding the pan. Remove chicken and set aside.
