  • 1.5 kg Chicken pieces(Bone-in, skin-on pieces like thighs and drumsticks)
  • 2 tbsp Vegetable oil
  • 1 medium Onion(chopped)
  • 1 medium Bell pepper(any color, chopped)
  • 4 medium Tomatoes(chopped, or 1 can (14.5 oz) diced tomatoes)
  • 4 cloves Garlic(minced)
  • 2 cups Chicken broth
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 0.25 cup Fresh cilantro(chopped, for garnish)

    Season chicken pieces generously with salt and pepper.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Sear chicken pieces on all sides until golden brown. Remove chicken and set aside.
