Poulet Mayo (Kinshasa Style)
A popular street food from Kinshasa, Poulet Mayo features chicken marinated in spices, then roasted or grilled to smoky perfection, and finally coated in a creamy, tangy mayonnaise sauce. It's often served with fried plantains or rice.

🧂 Ingredients
- 1 kg Whole chicken(cut into pieces)
- 4 tbsp Mayonnaise
- 1 tbsp Mustard
- 1 tbsp Lemon juice
- 1 medium Onion(thinly sliced)
- 1 medium Green bell pepper(sliced)
- 1 medium Red bell pepper(sliced)
- 1 small Habanero pepper(finely chopped (optional, adjust to taste))
- 1 tsp Garlic powder
- 1 tsp Paprika
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Olive oil
👨🍳 Instructions
- 1
Cut the chicken into serving pieces. In a bowl, combine the chicken pieces with garlic powder, paprika, salt, black pepper, and olive oil. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes, or preferably longer in the refrigerator.
- 2
Preheat your oven to 175°C (350°F). Arrange the marinated chicken on a baking tray.
- 3
Roast the chicken for 40-50 minutes, or until cooked through and golden brown. Flip halfway through for even cooking.
- 4
While the chicken is roasting, prepare the vegetables. Slice the onion, green bell pepper, and red bell pepper. Finely chop the habanero pepper if using.
- 5
In a separate bowl, combine the mayonnaise, mustard, lemon juice, and the chopped habanero (if using). Mix well to create the sauce.
- 6
Once the chicken is cooked, remove it from the oven. In a large bowl, combine the cooked chicken pieces with the sliced onions and bell peppers. Pour the mayonnaise sauce over the chicken and vegetables and toss gently to coat everything evenly.
- 7
Return the coated chicken and vegetables to the baking tray. Bake for another 15-20 minutes, or until the vegetables are tender and the sauce is heated through.
- 8
Serve hot, garnished with fresh parsley or green onions if desired. Poulet Mayo is traditionally served with fried plantains, rice, or fufu.
💡 Pro Tips
- ✓For a smoky flavor, grill the chicken over charcoal before coating it with the mayonnaise sauce.
- ✓Adjust the amount of habanero pepper to your spice preference.
- ✓If you don't have fresh habanero, a pinch of cayenne pepper can be used.
🔄 Variations
- Add other vegetables like sliced tomatoes or leeks.
- For a richer sauce, use a good quality full-fat mayonnaise.
