- 1 medium Onion(finely chopped)
- 1 medium Bell pepper(any color, finely chopped)
- 4 cloves Garlic(minced)
- 2 tbsp Tomato paste
- 1 can (14.5 oz) Diced tomatoes(undrained)
- 0.5 cup Chicken broth
- 1 tsp Thyme(dried)
- 1 whole Bay leaf
- 0.5 small Scotch bonnet pepper(finely minced, optional for heat)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 2 tbsp Chopped parsley(for garnish)
