  • 1 can (14.5 oz) Diced tomatoes(undrained)
  • 0.5 cup Chicken broth
  • 1 tsp Thyme(dried)
  • 1 whole Bay leaf
  • 0.5 small Scotch bonnet pepper(finely minced, optional for heat)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 2 tbsp Chopped parsley(for garnish)
