Finnish Rosolli with Herring
A vibrant and colorful layered salad, Rosolli is a traditional Finnish dish often served during holidays. This version includes pickled herring for a briny, savory element, layered with cooked root vegetables and a creamy dill dressing.

- 300 g Carrots(cooked and diced)
- 300 g Beets(cooked and diced)
- 200 g Pickled herring(drained and diced)
- 150 g Pickled cucumber(diced)
- 3 large Hard-boiled eggs(chopped)
- 1 small Onion(finely chopped)
- 0.25 cup Fresh dill(chopped)
- 200 ml Sour cream
- 100 ml Mayonnaise
- 1 tbsp Lemon juice
- 0.5 tsp Salt(or to taste)
- 0.25 tsp Black pepper(freshly ground)

Cook potatoes, carrots, and beets separately until tender. Let them cool completely. Peel and dice them into small, uniform cubes.

Dice the pickled herring, pickled cucumber, and hard-boiled eggs. Finely chop the onion.

Prepare the dressing: In a bowl, whisk together sour cream, mayonnaise, lemon juice, salt, pepper, and half of the chopped dill.

To assemble the Rosolli, you can either layer the ingredients in a large serving dish or individual bowls. Start with a layer of diced potatoes, followed by carrots, then beets. Add a layer of pickled cucumber, then the herring, and finally the chopped eggs and onion.
