🧂 Ingredients

  • 1 kg Freshwater fish(e.g., carp, pike, perch, cut into large pieces)
  • 3 l Water
  • 3 medium Potatoes(peeled and cubed)
  • 2 medium Carrots(peeled and sliced)
  • 1 large Onion(quartered)
  • 2 Bay leaves
  • 1 tsp Black peppercorns
  • 1/2 bunch Fresh dill(chopped)
  • 1/4 bunch Fresh parsley(chopped)
  • to taste Salt
  • 1/2 Lemon(for serving (optional))

👨‍🍳 Instructions

  1. 1

Rinse the fish pieces and place them in a large pot. Add water, the quartered onion, bay leaves, and black peppercorns.

  2. 2

Bring to a boil, then reduce heat and simmer for about 20-25 minutes, skimming off any foam that rises to the surface. This will create a clear broth.

  3. 3

Carefully remove the fish and the onion from the pot. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids. Return the broth to a simmer.

  4. 4

Add the cubed potatoes and sliced carrots to the simmering broth. Cook for about 15-20 minutes, or until the vegetables are tender.

  5. 5

While the vegetables are cooking, gently flake the cooked fish, removing any bones or skin. Discard the bones and skin.

  6. 6

Add the flaked fish back into the soup. Season with salt to taste. Stir in most of the chopped dill and parsley.

  7. 7

Simmer for another 5 minutes to allow the flavors to meld. Serve hot, garnished with the remaining fresh herbs and a wedge of lemon, if desired.

💡 Pro Tips

  • Using a whole fish or fish heads and bones can create a richer broth.
  • For a clearer broth, ensure you skim off all impurities during the initial simmering.
  • Avoid overcooking the fish once it's added back to the soup.

🔄 Variations

  • Add other root vegetables like parsnips or celery root.
  • A splash of white wine can add depth to the broth.
  • Some recipes include a small amount of millet or rice for a heartier soup.
