Typically made with freshwater fish, it's often seasoned with simple herbs and vegetables, creating a light yet satisfying dish. This soup is a testament to the Ukrainian appreciation for fresh ingredients and hearty, comforting meals.

🧂 Ingredients
- 1 kg Freshwater fish(e.g., carp, pike, perch, cut into large pieces)
- 3 l Water
- 3 medium Potatoes(peeled and cubed)
- 2 medium Carrots(peeled and sliced)
- 1 large Onion(quartered)
- 2 Bay leaves
- 1 tsp Black peppercorns
- 1/2 bunch Fresh dill(chopped)
- 1/4 bunch Fresh parsley(chopped)
- to taste Salt
- 1/2 Lemon(for serving (optional))
👨🍳 Instructions
- 1
Rinse the fish pieces and place them in a large pot. Add water, the quartered onion, bay leaves, and black peppercorns.
- 2
Bring to a boil, then reduce heat and simmer for about 20-25 minutes, skimming off any foam that rises to the surface. This will create a clear broth.
- 3
Carefully remove the fish and the onion from the pot. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids. Return the broth to a simmer.
- 4
Add the cubed potatoes and sliced carrots to the simmering broth. Cook for about 15-20 minutes, or until the vegetables are tender.
- 5
While the vegetables are cooking, gently flake the cooked fish, removing any bones or skin. Discard the bones and skin.
- 6
Add the flaked fish back into the soup. Season with salt to taste. Stir in most of the chopped dill and parsley.
- 7
Simmer for another 5 minutes to allow the flavors to meld. Serve hot, garnished with the remaining fresh herbs and a wedge of lemon, if desired.
💡 Pro Tips
- ✓Using a whole fish or fish heads and bones can create a richer broth.
- ✓For a clearer broth, ensure you skim off all impurities during the initial simmering.
- ✓Avoid overcooking the fish once it's added back to the soup.
🔄 Variations
- Add other root vegetables like parsnips or celery root.
- A splash of white wine can add depth to the broth.
- Some recipes include a small amount of millet or rice for a heartier soup.
