Prepare the ganache: Place the finely chopped dark chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer around the edges. Do not boil. Pour the hot cream over the chopped chocolate. Let it sit for 5 minutes to allow the chocolate to melt. Gently whisk the mixture starting from the center and working outwards, until a smooth, glossy ganache forms. Ensure all chocolate is melted and incorporated.

Infuse with Amarula and chill: Stir the Amarula liqueur into the warm ganache until fully combined. Cover the bowl tightly with plastic wrap, pressing the wrap directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 1.5 to 2 hours, or until the ganache is firm enough to scoop and roll.

Shape and coat the truffles: Line a baking sheet with parchment paper. Place the coated truffles on the prepared baking sheet.
