Shorpo-i Gushnodor (Noodle Soup with Meat)
A comforting and flavorful noodle soup with tender chunks of meat and vegetables, often considered a staple in Tajikistani homes. It's a hearty meal perfect for colder days.

- 500 g Lamb or Beef(cut into 1-inch cubes)
- 3 tbsp Vegetable Oil
- 2 medium Onions(chopped)
- 2 medium Carrots(peeled and diced)
- 3 medium Potatoes(peeled and cubed)
- 2 medium Tomatoes(diced)
- 2 liters Water or Broth
- to taste Salt
- to taste Black Pepper
- 1 Bay Leaf
- 200 g Fresh Noodles(or any pasta like egg noodles or spaghetti broken into pieces)
- 1/4 cup Fresh Dill(chopped, for garnish)
- 1/4 cup Fresh Parsley(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the meat cubes on all sides. Remove meat and set aside.

Add chopped onions to the pot and sauté until softened and translucent, about 5-7 minutes.

Add diced carrots and cubed potatoes to the pot. Cook for another 5 minutes, stirring occasionally.

Stir in the diced tomatoes and cook for 2-3 minutes until they begin to break down.

Return the browned meat to the pot. Pour in the water or broth, ensuring the meat and vegetables are covered. Add salt, pepper, and bay leaf.
