Soda Djabi (Malian Soybeans and Rice)

- 1 cup Dried soybeans(soaked overnight and drained)
- 3 tbsp Vegetable oil
- 1 large Onion(chopped)
- 2 cloves Garlic(minced)
- 2 tbsp Tomato paste
- 1 can (14.5 oz) Diced tomatoes(undrained)
- 3 cups Vegetable broth
- 1.5 cups Rice(long-grain white rice, rinsed)
- 1 leaf Bay leaf
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 1 pinch Optional: pinch of cayenne pepper

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
