  • 1 lb Beef chuck(cut into 1-inch cubes)
  • 2 tbsp Vegetable oil
  • 1 medium Yellow onion(chopped)
  • 4 cloves Garlic(minced)
  • 2 medium Tomatoes(diced)
  • 6 cups Beef broth
  • 2 cups Corn kernels(fresh or frozen)
  • 2 medium Green plantains(peeled and cut into 1-inch pieces)
  • 0.5 cup Cilantro(chopped)
  • to taste Salt
  • to taste Black pepper
  • 1 tsp Optional: Achiote paste(for color)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.
