Sopa de Chilote
A hearty and flavorful soup made with tender chunks of beef, corn, plantains, and a rich, savory broth, often seasoned with local herbs and spices. It's a comforting dish popular in Nicaraguan households.

- 1 lb Beef chuck(cut into 1-inch cubes)
- 2 tbsp Vegetable oil
- 1 medium Yellow onion(chopped)
- 4 cloves Garlic(minced)
- 2 medium Tomatoes(diced)
- 6 cups Beef broth
- 2 cups Corn kernels(fresh or frozen)
- 2 medium Green plantains(peeled and cut into 1-inch pieces)
- 0.5 cup Cilantro(chopped)
- to taste Salt
- to taste Black pepper
- 1 tsp Optional: Achiote paste(for color)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.

Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
