Sopa de Frijol con Huevo

- 1 pound Dried beans
- 8-10 cups Water
- 2 tablespoons Vegetable oil
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 1/2 large Green bell pepper(finely chopped)
- 2 medium Tomatoes(chopped)
- 2 medium Green bananas (guineos)(peeled and sliced)
- 1 bunch Culantro (cilantro)(chopped)
- 1 teaspoon Ground cumin

- 4 large Eggs
- 1/2 teaspoon Achiote powder (optional)

Rinse the dried beans and place them in a large pot with 8-10 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 1-1.5 hours, or until beans are tender. (Alternatively, use pre-cooked beans and bean broth).

While beans are cooking, heat vegetable oil in a separate skillet over medium heat. Add chopped onion, minced garlic, and chopped green bell pepper. Sauté until softened, about 5-7 minutes.

Add the chopped tomatoes to the skillet and cook for another 3-5 minutes until they begin to break down.

Once the beans are tender, add the sautéed vegetable mixture to the pot with the beans. Add the sliced green bananas, chopped culantro (cilantro), ground cumin, salt, and pepper. If using, add achiote powder for color.
