  • 3 large Tomatoes(ripe, diced)
  • 2 medium Cucumbers(peeled and diced)
  • 2 medium Bell peppers(any color, seeded and diced)
  • 1/2 medium Red onion(thinly sliced)
  • 150 g White cheese (Sirene or Feta)(grated or crumbled)
  • 2 tbsp Fresh parsley(chopped)
  • 3 tbsp Olive oil
  • 1 tbsp Red wine vinegar
  • 1/2 tsp Salt(or to taste)
  • 1/4 tsp Black pepper(freshly ground, or to taste)

    In a large bowl, combine the diced tomatoes, cucumbers, bell peppers, and sliced red onion.
