Syrian Freekeh with Chicken and Nuts
A hearty and flavorful dish made with roasted green wheat (freekeh), tender chicken, aromatic spices, and a generous topping of toasted nuts. It's a staple for special occasions and family gatherings.

- 2 cups Freekeh(rinsed)
- 1 kg Chicken(cut into pieces (bone-in or boneless thighs))
- 2 medium Onions(sliced)
- 3 cloves Garlic(minced)
- 4 cups Chicken broth
- 1 tsp Allspice
- 1/2 tsp Cinnamon
- 1/4 tsp Cardamom(ground)
- 1/2 tsp Turmeric
- to taste Salt
- to taste Black pepper
- 3 tbsp Olive oil
- 1 cup Mixed nuts(almonds, pine nuts, pistachios, toasted)
- 1/4 cup Parsley(chopped, for garnish)

In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

Add the sliced onions to the same pot and sauté until softened and lightly golden. Add the minced garlic and cook for another minute until fragrant.
