Ugandan Chicken and Vegetable Stew

- 1.5 kg Chicken(cut into serving pieces)
- 4 tbsp Vegetable oil
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 4 medium Tomatoes(diced)
- 1 large Green bell pepper(diced)
- 2 medium Carrots(peeled and sliced)
- 2 medium Potatoes(peeled and cubed)
- 4 cups Chicken broth
- 1.5 tbsp Curry powder
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and brown them on all sides. Remove chicken from the pot and set aside.
