Place the sweet potato chunks in a saucepan, cover with water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.
⏱️ 20 minutes - 2
While the sweet potatoes are cooking, heat the cooking oil in a separate pan over medium heat. Add the diced onion and sauté until softened and translucent, about 5-7 minutes.
⏱️ 7 minutes - 3
Add the minced garlic and red chili powder (if using) to the pan with the onions. Cook for 1 minute until fragrant.
⏱️ 1 minute - 4
Add the chopped greens to the pan. Stir and cook until wilted, about 3-5 minutes.
⏱️ 5 minutes💡 Tip: If using tougher greens like kale, you might need to add a splash of water and cover to help them soften. - 5
Add the water or vegetable broth to the greens, season with salt and pepper, and simmer for another 5 minutes.
⏱️ 5 minutes - 6
Once the sweet potatoes are tender, drain them well. Mash them in the saucepan or a bowl until smooth. You can add a little of the cooking liquid or a touch of oil for creaminess.
