🧂 Ingredients

  • 2 medium Whole tilapia(cleaned and scaled)
  • 1/2 cup Vegetable oil(for frying)
  • to taste Salt
  • to taste Black pepper
  • 1 cup Peanut butter(unsweetened, smooth)
  • 2 medium Tomatoes(diced)
  • 1 medium Onion(chopped)
  • 3 cloves Garlic(minced)
  • 1 tsp Ginger(grated)
  • 1 cup Beef or vegetable broth
  • 1 tsp Coriander powder
  • 1/2 tsp Cumin powder
  • 1/4 tsp Chili powder(or to taste)
  • 1 tbsp Lime juice
  • 2 tbsp Fresh cilantro(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Score the cleaned tilapia on both sides with a few diagonal cuts. Season generously inside and out with salt and pepper.

  2. 2

Heat vegetable oil in a large skillet or frying pan over medium-high heat. Carefully place the tilapia in the hot oil and fry for about 7-10 minutes per side, until golden brown and cooked through. Remove from pan and set aside.

  3. 3

In a separate saucepan, sauté the chopped onion in a little of the reserved frying oil until softened, about 5 minutes.

  4. 4

Add minced garlic and grated ginger, cooking for another minute until fragrant.

  5. 5

Stir in the diced tomatoes and cook until they begin to break down, about 5 minutes.

  6. 6

Add the peanut butter to the saucepan and stir until it begins to melt and combine with the tomato mixture.

  7. 7

Gradually whisk in the broth, ensuring a smooth sauce. Bring to a gentle simmer.

  8. 8

Stir in coriander powder, cumin powder, and chili powder. Simmer for 5-10 minutes, allowing the sauce to thicken slightly. Season with salt and lime juice.

  9. 9

To serve, place a fried tilapia on each plate and generously spoon the peanut sauce over it. Garnish with fresh cilantro.

💡 Pro Tips

  • Ensure the oil is hot enough before frying the fish to achieve a crispy skin.
  • If the peanut sauce becomes too thick, add a little more broth or water to reach desired consistency.
  • Adjust the chili powder to control the level of heat.
  • Serve with a side of steamed greens or rice.

🔄 Variations

  • Use a different type of white fish if tilapia is unavailable.
  • Add a splash of coconut milk to the peanut sauce for extra creaminess.
  • Grill or bake the fish instead of frying for a healthier option.
