Ugandan Tilapia with Peanut Sauce
Whole tilapia fish, pan-fried to crispy perfection and served with a rich, savory peanut sauce, a popular delicacy in Uganda, especially around Lake Victoria.

🧂 Ingredients
- 2 medium Whole tilapia(cleaned and scaled)
- 1/2 cup Vegetable oil(for frying)
- to taste Salt
- to taste Black pepper
- 1 cup Peanut butter(unsweetened, smooth)
- 2 medium Tomatoes(diced)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 tsp Ginger(grated)
- 1 cup Beef or vegetable broth
- 1 tsp Coriander powder
- 1/2 tsp Cumin powder
- 1/4 tsp Chili powder(or to taste)
- 1 tbsp Lime juice
- 2 tbsp Fresh cilantro(chopped, for garnish)

Score the cleaned tilapia on both sides with a few diagonal cuts. Season generously inside and out with salt and pepper.

Heat vegetable oil in a large skillet or frying pan over medium-high heat. Carefully place the tilapia in the hot oil and fry for about 7-10 minutes per side, until golden brown and cooked through. Remove from pan and set aside.

In a separate saucepan, sauté the chopped onion in a little of the reserved frying oil until softened, about 5 minutes.

Add minced garlic and grated ginger, cooking for another minute until fragrant.

Stir in the diced tomatoes and cook until they begin to break down, about 5 minutes.

Add the peanut butter to the saucepan and stir until it begins to melt and combine with the tomato mixture.

Gradually whisk in the broth, ensuring a smooth sauce. Bring to a gentle simmer.

Stir in coriander powder, cumin powder, and chili powder. Simmer for 5-10 minutes, allowing the sauce to thicken slightly. Season with salt and lime juice.

To serve, place a fried tilapia on each plate and generously spoon the peanut sauce over it. Garnish with fresh cilantro.
