Caraotas Refritas (Venezuelan Refried Black Beans)

- 3 cups Cooked black beans(Canned or home-cooked. If using canned, drain and rinse, reserving about 1/2 cup of the liquid.)
- 3 tablespoons Vegetable oil or lard(Lard will provide a more traditional flavor.)
- 2 cloves Garlic(Minced or finely chopped.)
- 1/2 teaspoon Ground cumin
- to taste Salt(Optional, especially if beans are already salted.)
- 1/4 to 1/2 cup Reserved bean liquid or water(To adjust consistency.)

Heat the oil or lard in a large skillet or frying pan over medium heat (approximately 175°C / 350°F). Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it. The garlic should be golden, not brown.

Add the cooked black beans to the skillet. If you are using canned beans, include about 1/4 cup of the reserved liquid. If using home-cooked beans, add a splash of their cooking liquid or water. Stir to combine with the garlic and oil.

Using a potato masher or the back of a sturdy spoon, begin to mash the beans against the side of the skillet. Continue to cook and mash the beans for about 10-15 minutes, stirring frequently. Add more reserved liquid or water, a tablespoon at a time, as needed to achieve a creamy, thick consistency. The beans should start to thicken and become paste-like.

Continue to cook for another 2-3 minutes, stirring constantly, until the beans are well-combined with the seasonings and have reached your desired creamy texture.
