Zambian Beef Stew with Sweet Potatoes

- 1 kg Beef chuck(cut into 2-inch cubes)
- 3 tbsp Vegetable oil
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 1 tbsp Ginger(freshly grated)
- 400 g Tomatoes(canned diced)
- 2 tbsp Tomato paste
- 4 cups Beef broth
- 2 large Sweet potatoes(peeled and cut into 1-inch cubes)
- 2 tsp Curry powder
- 1 tsp Cumin
- 1 tsp Coriander
- 0.5 tsp Chili powder(or to taste)

- 0.25 cup Fresh cilantro(chopped, for garnish)

Pat the beef dry with paper towels and season generously with salt and pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the diced tomatoes, tomato paste, curry powder, cumin, coriander, and chili powder. Cook for 2 minutes, stirring constantly.

Return the browned beef to the pot. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
