  • 2 tbsp Vegetable oil
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 tbsp Ginger(grated)
  • 400 g Tomatoes(canned diced, or fresh chopped)
  • 500 ml Beef broth
  • 150 g Peanut butter(smooth or crunchy, unsweetened)
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(freshly ground, or to taste)
  • 2 Bay leaves
  • 1 Optional: Chili pepper(finely chopped, for heat)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides in batches, then set aside.

    Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger (and chili pepper, if using) and cook for another minute until fragrant.
