🧂 Ingredients

  • 750 g Beef(stewing cuts like chuck or brisket, cut into 1-inch cubes)
  • 400 g Okra(fresh or frozen, trimmed and cut into 1-inch pieces)
  • 2 large Onions(chopped)
  • 400 g Tomatoes(canned chopped, or fresh ripe tomatoes, chopped)
  • 4 cloves Garlic(minced)
  • 1 tablespoon Ginger(grated)
  • 3 tablespoons Vegetable oil
  • 500 ml Beef broth
  • 1 tablespoon Curry powder
  • to taste Salt
  • to taste Black pepper
  • a handful Fresh cilantro or parsley(chopped, for garnish)

    Season beef cubes with salt and pepper.

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides in batches. Remove beef and set aside.
